If kampua mee and ding bian hu are already on your Kuching list, this is the Foochow bowl I’d try next: sour-mustard thick bihun, a Sibu-style noodle soup served at Shan Hu Foochow Special (Sibu).

Ling Shan Hu has spent 15 years refining the dish. Its thick rice vermicelli sits in chicken-stock broth with Foochow red wine; mustard greens pickled with red-yeast rice residue give it the sour edge. Choose chicken or pork belly, with tomato and garlic, or ask about the seafood option.

There’s a family thread behind Ling’s cooking: her parents were fishermen, so she and her siblings learned to make their own meals while they were away; their grandmother taught them. Ling later worked in several eateries and spent four years in Kota Kinabalu before setting up her current Kuching stall. She also makes her own Foochow rice wine and uses it in most dishes, so ask if you need it left out.

For a first taste of Sibu-style Foochow food, I’d pick this over ordering another familiar noodle by habit—the sour mustard and thick bihun make the bowl feel like a different regional tradition, without requiring a whole feast.

Shan Hu Foochow Special (Sibu), JJ Cafe, 3rd Mile, Maong Bazaar, Kuching. Open daily 7am–2pm, except Friday. Call 016-887 0757.

Would you try the sour mustard version first, or start with one of the better-known Foochow bowls?
